Kim’s Cheeseburger Quesadilla

So my bestie became an instant mommy when she married the love of her life.  He came complete with a cute little 9 year boy and a lovely 14 year old girl…but talk about picky eaters!  She doesn’t love to be in the kitchen for hours (or minutes for that matter lol), so she’s always asking me for quick and easy recipes that the kids will enjoy.  

This is one of my favorites because it’s a fan favorite for kids and adults alike.   The best part is, it takes about 15 minutes to make max.  Definitely a winner for a weeknight meal. 

Ingredients:

½ Onion (finely chopped)
3 cloves of garlic (minced)
1 lb Ground beef (Makes 2 quesadillas)
Salt, black pepper, and paprika to taste
Olive oil
Parsley
2 large size Tortillas (10 inch)
Mozzarella cheese (about ½ – 1 c)

Recipe: 

Heat about 2 tablespoons of olive oil over medium heat.  Add the onion and sauté it until tender.  Add the garlic after about 2-3 minutes.  Sauté for only 1 minute more to avoid burning.

Take one tortilla and cut off an inch around it.  (You’re going to have 1 tortilla that’s full sized and the other will be slightly smaller so that you can close the sides around it). 

Dice the leftover tortilla into strips (optional).

If using the tortilla strips, add them to the pan and fry for 2 minutes, then add the ground beef.  (If not, skip straight to the ground beef).  Sauté for 3-5 minutes. Add salt, pepper, and paprika to taste.

Finely chop and add the parsley (as much or as little as you prefer) and set aside. 

Now take the larger tortilla and add Mozzarella cheese.  Then add the meat inside of the tortilla, sprinkle some more mozzarella cheese, and then cover with the small tortilla. 
Sprinkle a tad more mozzarella cheese on the edges, and then fold the sides of the tortilla around the smaller one to seal the quesadilla.  

Cover with a plate to hold the shape in place.

Then, heat the Olive oil or butter over medium heat.  Flip the tortilla over using the plate and transfer the tortilla to the pan.  Brush some oil or butter (I prefer butter here) on top and fry for 3 minutes. 

Use the plate to flip the tortilla over again and fry for another 2-3 minutes 

You are Done!
